Amazing Recipes By Chef Marina Mustafa With Philips All-In-One Pressure Cooker

Continue from my last sharing session with Chef Marina Mustafa, chef will review her recipes cooking using Philips All-In-One Pressure Cooker. You can't believe the dishes texture is soft and less that 1 hours you can prepare such a delicious food.


Rendang Tok (using the Philips All-in-One Pressure Cooker)



Ingredients
* 1 kg beef, cut into 1.5 inch cubes/daging dipotong segi empat sebesar 1.5 inci
* 3 tbsp ground coriander/serbuk ketumbar
* 1 tbsp ground fennel/serbuk jintan manis
* 2 tbsp ground cumin/serbuk jintan putih
* 2 tbsp ground cinnamon/serbuk kayu manis
* ¾ cup coconut oil/minyak kelapa
* 4 star anise/bunga lawing
* 6 cardamoms/pelage
* 6 cloves/cengkih
* 4 cups of coconut cream/santan pekat
* ½ cup grated palm sugar/gula Melaka
* ½ cup kerisik
* 1 tbsp tamarind paste diluted in 1 cup water, discard seeds/pes asam jawa dibancuh dengan 1 cawan air, dibuang bijinya
* 2 turmeric leaves, sliced finely/daun kunyit, dimayang
* 2 tsp salt/garam
* 1 tsp coarsely ground black pepper/serbuk lada hitam

Ingredients to be blended:
* 15 small red onions/bawang merak kecil
* 2 large red onions/bawang merah besar
* 5 cloves of garlic/bawang putih
* 1 inch ginger/halia
* 2 inches of galangal/lengkuas
* 6 lemongrass/serai
* 20 dried chillies, soaked and drained/cili kering
* 1 inch turmeric root/kunyit hidup

Method
1. Smother the ground ingredients all over to coat the meat
2. Put the beef cubes into the Philips All-in-One Pressure Cooker (Philips AIOPC) inner pot
3. Pour all the blended ingredients and the star anise, cardamom and cloves over
4. Pour in the coconut milk, tamarind juice and palm sugar, and stir.
5. Close the lid and press BEEF, and then press START
6. Point the knob on the lid to the middle to the PRESSURE/SEAL mode
7. When ready, release the pressure by turning the knob to VENT. Open the lid and put in the kerisik, salt and pepper, then stir.
8. Press SAUTE/SEAR HIGH TEMP button, set cooking time to 15 minutes and press START
9. With lid open, continue stirring the rendang tok until the gravy thickens. Increase the searing time if a dry consistency is desired.
10. Sprinkle with turmeric leaves over the rendang tok when serving.
1. Sapukan ketulan daging dengan kesemua serbuk rempah
2. Masukkan daging ke dalam periuk Philips AIOPC
3. Tuangkan kesemua bahan dikisar serta bunga lawing, pelage dan cengkih
4. Tuangkan santan pekat, asam jawa & gula Melaka bersama dan gaulkannya.
5. Tutupkan tudung dan pilih BEEF dan tekan START
6. Arahkan knob ke PRESSURE/SEAL.
7. Apabila rendang tok sudah siap, pusingkan vent ke kanan sekali untuk melepaskan tekanan. Masukkan kerisik, garam dan serbuk lada hitam.
8. Tekan SAUTE/SEAR HIGH TEMP dan pilih masa masakan selama 15 minit, dan tekan START.
9. Gaulkan rendang tok sehingga kuahnya memekat. Jika ingin, tambahkan masa SEAR supaya mendapat rendang tok yang lebih kering.
10. Taburkan dengan daun kunyit apabila menghidang.


Lemang (using the Philips All-in-One Pressure Cooker)




Ingredients
* 2 cups glutinous rice, washed and drained
* 2 cups coconut milk
* ¼ cup water
* 1 tsp salt
* 2 pandan leaves, knotted
* 5 pcs 10” x 8” banana leaves
* 10 bamboo sticks toothpicks
* 2 cawan beras pulut, dibasuh dan ditoskan
* 2 cawan santan
* ¼ cawan air
* 1 sk garam
* 2 helai daun pandan, diikat
* 5 keping daun pisang, dipotong sebesar 10” x 8”
* 10 lidi 1 inci panjang
Method
1. Open the lid of the Philips All-in-One Pressure Cooker (Philips AIOPC)
2. Press SEAR HIGH HEAT and then press START
3. Soften the banana leaf by placing it in the heated inner pot
4. Set the wilted banana leaves aside for later use
5. Put the glutinous rice into the Philips AIOPC inner pot
6. Season with salt
7. Pour in the coconut milk
8. Put in the pandan leaves and give a quick stir
9. Close the lid and turn the knob towards SEAL
10. Press the RICE setting and press START
11. When it’s ready, release the pressure.
12. Scoop 4 tbsp of the cooked glutinous rice onto the wilted banana leave
13. Compress the rice into a roll using the banana leaf and bamboo mat
14. Seal the sides of the banana leaf with bamboo sticks
15. Press SEAR HIGH TEMP and then START
16. Place the rolled lemang into the inner pot to sear all sides
17. When the outer skin is slightly crisp, lift it up onto a board and allow to cool slightly
18. Remove the banana leaf and slice the lemang into 1-inch discs
19. Serve with rendang or serunding
1. Buka tudung Philips AIOPC
2. Tekan SEAR HIGH HEAT dan tekan START
3. Masukkan daun pisang ke dalam periuk supaya daun dapat dilayukan
4. Ketepikan daun pisang yang sudah dilayukan untuk menggulung lemang nanti
5. Untuk memasak pulut, masukkan beras pulut kedalam periuk Philips AIOPC
6. Masukkan garam dan tuangkan santan dan air ke atas beras. Gaulkannya bersama.
7. Letakkan daun pandan ke dalam periuk dan tutupkan tudung.
8. Pusingkan knob Philips AIOPC kea rah SEAL. Tekankan RICE
9. Apabila pulut sudah masak, lepaskan pressure dan buka tudung AIOPC
10. Sendukkan 4 sb pulut ke atas daun pisang dan tekannya membujur dan mampat.
11. Kelimkan tepi daun pisang dengan lidi.
12. Tekan SEAR HIGH TEMP dan START
13. Letakkan lemang dalam periuk
14. Pusing-pusingkan lemang supaya ia dibakar kesemua bahagian luaran lemang
15. Apabila sudah dibakar, keluarkan dari periuk dan sejukkan seketika sebelum dipotong
16. Hidangkan bersama rendang atau serunding.
